The best paleo pumpkin waffles!


1 cup of coconut milk
1 tsp apple cider vinegar
4 eggs
3/4 cup pumpkin puree
1 tsp vanilla extract
4 tbsp coconut oil
2 tbsp maple syrup
1/2 cup coconut flour
1/2 cup tapioca flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
1/4 tsp salt
Dash of nutmeg
Dash of allspice
Mix milk and apple cider vinegar and let sit for 5 minutes.
Meanwhile, get waffle maker hot. Combine all dry ingredients and keep separate. In a medium bowl wisk eggs, vanilla, pumpkin puree, maple syrup and coconut oil.  After the 5 minutes add in the milk and vinegar mixture. Now add your flour mixture. Batter shouldnt be too thin or watery.
Oil the waffle iron with lots of coconut oil in between!
This made 6 waffles on my round iron.
